Pickled Onions

For my pickled onions, I follow the recipe from Cook Beautiful by Athena Calderone. I love this cookbook and will be selling copies at The Winsome Nest!

  • ½ cup (120ml) cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon coriander seeds
  • 1 teaspoon kosher salt
  • 1 small red onion, thinly sliced

Add all ingredients except the sliced onions to a saucepan and bring to a boil. Add onions to a jar with a lid. Pour the liquid over onions and let sit. Refrigerate after cooling … enjoy!
